Nigori Sake
Nigori sake is commonly recognized for its misty appearance.
In fact, its name can be translated roughly from Japanese to mean “cloudy.”
This drink resembles the earliest incarnations of sake.
The reason for the foggy appearance of the nigori sake is its older
styled filtration process. During the processing of any sake, some rice
particles are left behind unfermented. With most styles, these particles
are filtered out with newer technologies. This cloudy variety of the
drink involves rougher filtration which does not rid the liquid of all
rice fragments.
The rice bits tend to settle at the bottom of a nigori sake bottle.
As a result, a regular practice is to shake up the drink before each
pour. This ensures that the unfermented sediments are equally distributed.
