Profile: KIKU-MASAMUNE Saké BREWING CO., LTD. was established in 1659 in Mikage-go, Ubara-no-kouri in the country of Settsu (now Mikage, Higashinada-ku in Kobe city). Various technical innovations were made in each period of time, supporting the development of Nada's saké-making throughout the past 340 years of KIKU-MASAMUNE's history. At the time of An-ei (latter half of 18th century), rice was generally polished by trampling down in a mortar. But in Nada area, the rice-polishing operation was already being done with the use of water wheels taking advantage of the slopes on the outskirts of Mt. Rokko in order to save on labor and increase efficiency. And in 1840, "Miya-Mizu" water was discovered, which contributed to remarkably improve the taste of Nada's saké and made the name everlasting. In the Bunka period (1804-1817), many Tohji (professional saké-brewing worker) entered each of saké breweries from Tanba district, and invented the excellent brewing techniques which have remained in use until today. The Tanba district still produces a large number of skillful Tohji. The fine quality saké, KIKU-MASAMUNE, representative of Nada's saké, has been brewed using the accumulation of technical improvements, and has kept its position as Japan's top saké brand for over 340 years.
